recipe – nourishing miso soup

I enjoy romanticising simple, everyday dishes - making them a little more interesting or packing them with extra nutrients where I can. Miso soup is quite a simple and uncomplicated dish, most commonly served as a starter or side. It’s something my friend Vicki is always making. Miso soup for her is what dal is for me. I had a craving, so I made one this past week - and I loved it!
I’m currently based in Barcelona for a few months for work. I come here for a few months every year - it really does feel like a second home now. I’m staying at my friend Sophie’s place. I met Sophie last year via Instagram when she responded to a call-out I posted, asking if anyone had a spare room for me to stay in. The stars truly did align - we have so much in common, and we seem to move to a similar beat in life. It’s funny how life works like that. So now, when I come to Barcelona, I try to stay with Sophie. It makes these trips a little easier on my nervous system, as I get to come back to a familiar space and be around someone I know well.
